Blasted Brew Tiramisu
A classic dessert with a Legendary twist! Perfectly creamy with ladyfingers soaked in our Blasted Brew Liqueur.
- 6 large egg yolks
- 2/3 cup of sugar
- 1/4 tsp salt
- 700 grams of Mascarpone cheese (can use 1/2 blended cottage cheese)
- 2 tsp pure vanilla extract
- 1 - 1/2 cups heavy cream
- 1 - 1/2 cups espresso or strong coffee
- 1/2 cup Legend Blasted Brew
- 45 Ladyfingers
- 1/4 cup unsweetened cocoa powder
Combine egg yolks, granulated sugar and salt in a stainless bowl. Set bowl over saucepan of gentle simmering water, whisking constantly.
Once thickened and pale in colour (after about 8 minutes) remove the bowl from the saucepan and set aside to cool for 10 minutes. Whisk the cheese and vanilla into the mixture until well combined (resist the urge to overmix;).
In a separate bowl, beat the cream to stiff peaks. Fold half the whip into the egg mixture until fully combined, then fold in the rest.
In a shallow dish combine the espresso and Blasted Brew. Dip lady fingers into the coffee mixture and arrange ½ in a single layer in 9×13 baking pan. Spread ½ the whip mixture over the lady fingers and top with another layer of boozy soaked lady fingers. Spread the remaining whip mixture over the lady fingers and dust with cocoa powder.
Cover and refrigerate for at least 8 hours or overnight to allow the lady fingers to soften.
To serve, cut into 3” squares and garnish each piece with a single coffee bean and an extra little drizzle of Blasted Brew if you’re feeling naughty!
